Chicken Teriyaki, Lacquered in Soy, Mirin, and Sake

Teriyaki translates roughly to 'glossy grill', and the shine comes from a few spoonfuls of liquid and sugar reducing in the same pan as the chicken. No bottle needed, and the skin stays crisp under the glaze.
